BBQ Pork Ribs

Fall-off-the-bone pork ribs coated in a smoky, sweet, and spicy dry rub then slow-baked until tender. Finished with a caramelised crust — a crowd-pleasing classic for any occasion.

Instructions

  1. Preheat oven to 150°C (300°F).
  2. Mix paprika, brown sugar, garlic powder, cayenne pepper, salt, black pepper, and thyme in a bowl.
  3. Remove the membrane from the back of the ribs.
  4. Rub the spice mixture generously all over the ribs.
  5. Wrap tightly in aluminium foil and place on a baking tray.
  6. Bake for 2.5–3 hours until the meat is very tender.
  7. Unwrap, brush with ketchup mixed with a little brown sugar, and return to the oven uncovered.
  8. Bake at 220°C (425°F) for a further 15–20 minutes until caramelised.
  9. Rest for 5 minutes before serving.
