  1. Slice sirloin thinly against the grain and marinate with soy sauce and cornstarch for 15 minutes — this tenderizes the meat and locks in flavor.
  2. Blanch broccoli florets in boiling water for 2 minutes, then drain and set aside to preserve their bright green color and crunch.
