A classic Chinese-American stir-fry of tender chicken with crisp vegetables in a savory oyster-soy sauce. Fast, satisfying, and endlessly versatile — a weeknight favorite.

Prepare

  1. Slice chicken breast thinly. Toss with a pinch of salt and 1 tsp cornstarch.
  2. Chop broccoli into florets. Julienne the carrot. Trim the green beans.
  3. Mix sauce: soy sauce, oyster sauce, remaining cornstarch, and water. Set aside.

Stir-Fry

  1. Heat cooking oil in a wok or large pan over high heat.
  2. Stir-fry chicken until just cooked through, about 3–4 minutes. Set aside.
  3. In the same pan, add more oil if needed. Stir-fry garlic and ginger for 30 seconds.
  4. Add carrot and green beans; stir-fry 2 minutes.
  5. Add broccoli and bean sprouts; stir-fry 2 more minutes until vegetables are crisp-tender.

Finish

  1. Return chicken to the pan. Pour in the sauce.
  2. Toss everything together and cook 1–2 minutes until the sauce thickens and coats everything.
  3. Garnish with sliced green onion and serve with steamed rice.
