A classic Chinese-American stir-fry of tender chicken with crisp vegetables in a savory oyster-soy sauce. Fast, satisfying, and endlessly versatile — a weeknight favorite.
Prepare
- Slice chicken breast thinly. Toss with a pinch of salt and 1 tsp cornstarch.
- Chop broccoli into florets. Julienne the carrot. Trim the green beans.
- Mix sauce: soy sauce, oyster sauce, remaining cornstarch, and water. Set aside.
Stir-Fry
- Heat cooking oil in a wok or large pan over high heat.
- Stir-fry chicken until just cooked through, about 3–4 minutes. Set aside.
- In the same pan, add more oil if needed. Stir-fry garlic and ginger for 30 seconds.
- Add carrot and green beans; stir-fry 2 minutes.
- Add broccoli and bean sprouts; stir-fry 2 more minutes until vegetables are crisp-tender.
Finish
- Return chicken to the pan. Pour in the sauce.
- Toss everything together and cook 1–2 minutes until the sauce thickens and coats everything.
- Garnish with sliced green onion and serve with steamed rice.
