Chicken Fricassee

A comforting Latin-style chicken stew slow-braised with tomatoes, bell pepper, and aromatics until fall-off-the-bone tender.

Instructions

Step 1 — Season the Chicken

Season chicken pieces generously with salt, black pepper, and dried oregano. Let sit for 10 minutes.

Step 2 — Sear

  1. Heat olive oil in a large heavy pot over medium-high heat.
  2. Brown chicken on all sides — about 3–4 minutes per side.
  3. Remove and set aside.

Step 3 — Build the Sofrito

  1. In the same pot, sauté diced white onion and bell pepper over medium heat for 5 minutes.
  2. Add minced garlic and cook 1 minute more.

Step 4 — Braise

  1. Add canned tomatoes and stir to combine.
  2. Return chicken to the pot.
  3. Add water, bay leaf, and carrots.
  4. Cover and simmer on low for 35–40 minutes until chicken is cooked through.

Step 5 — Finish

  1. Stir in peas and cook 5 more minutes.
  2. Remove bay leaf.
  3. Adjust seasoning and serve over white rice.

Tip: Bone-in chicken thighs give the best flavour, but chicken breast works well for a lighter version.
