Chicken Fricassee
A comforting Latin-style chicken stew slow-braised with tomatoes, bell pepper, and aromatics until fall-off-the-bone tender.

Instructions
Step 1 — Season the Chicken
Season chicken pieces generously with salt, black pepper, and dried oregano. Let sit for 10 minutes.
Step 2 — Sear
- Heat olive oil in a large heavy pot over medium-high heat.
- Brown chicken on all sides — about 3–4 minutes per side.
- Remove and set aside.
Step 3 — Build the Sofrito
- In the same pot, sauté diced white onion and bell pepper over medium heat for 5 minutes.
- Add minced garlic and cook 1 minute more.
Step 4 — Braise
- Add canned tomatoes and stir to combine.
- Return chicken to the pot.
- Add water, bay leaf, and carrots.
- Cover and simmer on low for 35–40 minutes until chicken is cooked through.
Step 5 — Finish
- Stir in peas and cook 5 more minutes.
- Remove bay leaf.
- Adjust seasoning and serve over white rice.
Tip: Bone-in chicken thighs give the best flavour, but chicken breast works well for a lighter version.
