A rich, creamy Indian curry with tender marinated chicken in a spiced tomato-cream sauce. One of the most beloved curries in the world, balancing warmth and comfort in every bite.

Marinate the Chicken

  1. Cut chicken breast into bite-sized pieces.
  2. Mix with turmeric, garam masala, cayenne pepper, garlic powder, salt, and a drizzle of cooking oil.
  3. Marinate for at least 30 minutes (overnight for best results).

Cook the Chicken

  1. Heat cooking oil in a large pan over high heat.
  2. Sear the chicken pieces until charred on the outside, about 5–6 minutes. Set aside.

Make the Sauce

  1. In the same pan, melt butter over medium heat.
  2. Add minced garlic and grated ginger; sauté 2 minutes until fragrant.
  3. Add paprika, garam masala, turmeric, and cayenne; stir 1 minute.
  4. Pour in canned tomatoes, crush them down, and simmer 10 minutes.
  5. Stir in water if needed to loosen the sauce.

Finish

  1. Return chicken to the pan, simmer 10 more minutes.
  2. Garnish with fresh cilantro and serve with rice.
