Marinate the Chicken
- Cut chicken breast into bite-sized pieces.
- Mix with turmeric, garam masala, cayenne pepper, garlic powder, salt, and a drizzle of cooking oil.
- Marinate for at least 30 minutes (overnight for best results).
Cook the Chicken
- Heat cooking oil in a large pan over high heat.
- Sear the chicken pieces until charred on the outside, about 5–6 minutes. Set aside.
Make the Sauce
- In the same pan, melt butter over medium heat.
- Add minced garlic and grated ginger; sauté 2 minutes until fragrant.
- Add paprika, garam masala, turmeric, and cayenne; stir 1 minute.
- Pour in canned tomatoes, crush them down, and simmer 10 minutes.
- Stir in water if needed to loosen the sauce.
Finish
- Return chicken to the pan, simmer 10 more minutes.
- Garnish with fresh cilantro and serve with rice.
