A vibrant, aromatic Thai curry made with fragrant green curry paste and tender chicken in a rich coconut milk sauce. Bright, fresh, and mildly spicy — a weeknight favourite with steamed rice.
Instructions
- Heat cooking oil in a wok or deep pan over medium-high heat.
- Add the green curry paste and stir-fry for 1–2 minutes until fragrant.
- Add the chicken breast, cut into bite-sized pieces, and cook until sealed, about 3–4 minutes.
- Pour in 400ml coconut milk and bring to a gentle simmer.
- Add sliced bell pepper and cook for 5 minutes until tender.
- Season with fish sauce, sugar, and salt to taste.
- Squeeze in lime juice and stir.
- Serve over steamed rice, garnished with fresh cilantro.
