A classic Colombian breakfast of scrambled eggs cooked with fresh tomato, white onion, and cilantro. Quick, colorful, and full of flavor — a staple of the Colombian morning table.

Prep the Vegetables

  1. Dice the tomato and finely chop the white onion and cilantro.

Cook

  1. Melt butter in a non-stick pan over medium heat.
  2. Add the onion and cook 2–3 minutes until softened.
  3. Add the tomato, season with salt and black pepper, and cook 2 minutes until slightly broken down.

Add the Eggs

  1. Crack eggs directly into the pan.
  2. Stir gently and continuously with a spatula, folding the eggs into the tomato-onion mixture.
  3. Cook until just set but still moist — about 2–3 minutes. Do not overcook.

Serve

  1. Remove from heat, fold in fresh cilantro, and serve immediately with bread or arepas.
